Our latest food finds…

We’ve been struggling with Gavin’s weight lately. And not because of an issue with enzymes or anything CF related (we think), but because he has decided to become uber picky, and won’t eat anything!

Definite panic mode for us around here, but (knock on wood!) our creativity seems to be working and we’re starting to find things that he will shovel down.

Step 1. Find the highest calorie/fat filled foods possible. He won’t eat a lot of anything, so the more calories/fat we can stick in those little bites…the better! And if it’s not already high calorie/fat filled? Figure out a way to make it so! (Adding butter, creams, oils, etc)

Step 2. Get creative. We’ve gone outside our box of usual staple foods, have let him use utensils on nearly every meal, let him help us “prepare” his food etc, add decorative sprinkles, etc.

Step 3. Let him have a small opinion on what he wants. Emphasis on small. He’s not able to pick out the main course of his upcoming meal, but we do let him pick out the sides. Corn or green beans? Banana or peaches? Ice cream or smoothie? While either of his choices will give him relatively the same nutritional benefits, he feels like he has some control over his food choices.

Step 4. Do not force them to eat anything. This was the hardest for us. We desperately want him to eat, but we cannot allow it to become a daily battle. We try a few different options, but we are not a restaurant and I am not a short order cook. If he won’t eat it, he leaves the table. We wait an hour or two, and try to introduce a meal again.

Through our own searches, along with the help of other CF moms/dads we’ve discovered a few high calorie & fat filled foods that a toddler loves.

First off, we found this buttery spread at our local Walmart. My biggest pet peeve with regular butter is that it won’t spread! This spreads just like margarine, but has the necessary high calories. Also has flax seed & is great source of Omega 3s.

  • 80 calories, 80 fat calories
  • Total fat per serving: 9 grams

We found two different Greek yogurts that Gavin loves. To find these, you’ll most likely need to hit up your grocer’s organic section and will have to hit up a regular grocery store rather than a Walmart/Target. A big plus of the Greek yogurts? They are thicker than a typical yogurt, so more of it makes it from the spoon into the mouth…instead of the lap or the floor!

This first one, Liberte, is a little bit cheaper & has fruit on the bottom.

  • 250 calories, 130 fat calories
  • Total fat per serving: 14 grams

This second brand, The Greek God’s was a tad more expensive and the flavor is mixed in. This is the honey flavor (another CF mom told me the pomegranate flavor has more fat but we couldn’t find that one).

  • Calories 250, 130 fat calories
  • Total fat per serving: 14 grams

This Dannon DanActive drink has some calories, but we bought it more for it’s benefits. It contains probiotics, and helps to boost your immune system…we gotta get ready for the upcoming flu season (shudder). Gavin gulps this stuff down with his snacks! I highly recommend it!

Hope this helps out a few of you…and helps other CF parents to avoid the struggles we’ve faced!

Flash Me! Friday

This week we’re switching it up a little bit.

With the seasons changing…the air getting cooler…and many hours of watching football games ahead of us…

What is your favorite cold weather comfort food?

A staple for us around here is

TATOR TOT HOTDISH!

For those of you who do not live in Minnesota
hotdish = casserole

It couldn’t be more simple!

Ingredients
1 to 1 1/2 lbs of ground beef
1 bag of frozen tator tots (we like the extra crispy ones)
1 can of drained green beans
1 can of drained corn (*optional)
1 can of cream of mushroom soup
1 can of cream of chicken soup (*optional)

Directions

  • Ground beef on stove, then drain
  • In a 9x13 baking pan mix cooked/drained ground beef, veggies, and cream soups, spread mixture across pan
  • Top with frozen tator tots
  • Bake at 350 for 30-40 minutes (or until tators are brown & crispy!)

tator totthis is not my picture, but is what it looks like!

* You can choose to add corn if you want more veggies,

* Hotdish is “thick” with one can of soup. We like ours a bit soupier so we combine the 2 flavors :)

*You can also add chopped onions and garlic salt to the mix for added flavor :)

This warms the soul on those chilly days…and for those houses with a CFer? It is also filled with calories :)

Tomorrow’s Flash…

Let’s switch it up a little bit for tomorrow.

Instead of flashing your home…let’s flash a favorite dish. This time around…No picture, no problem :)

Now that fall is here, the air has cooled off (for many of us) and football season has arrived! So….

What’s your favorite cold weather comfort food?

Provide the recipe & a picture if you happen to have one!

Bieber Fever

Gav might only be 19 months old…but that doesn’t mean he’s not one hip toddler!

He loves his high top Chucks…

He loves all of his clothes from Baby Gap…

And he loves anything having to do with Justin Bieber.

He constantly runs around the house screaming, “Baby…Baby…Ohhhhh!” (the lyrics to one of his songs) and points to the tv saying…”Baby, Baby ON!” – or - “watch Baby!”

I made the mistake of showing him that the video was playing on our cable On Demand this month, and I think we’ve just had to watch it about 12 times today.

I dare you to try to turn on a different artist. He’s ok with switching up the song (kind of) as long as Bieber is singing…but if you try to head him in a different musical direction an immediate breakdown/tantrum/scream session will occur.

Well…except for Dave Matthews…he could sit and “drum” with his Dada to that all day long.

Like I said, he’s one hip toddler :)

State Fair time…and other stuff :)

I meant to post yesterday…I really, really did.

But then, on Sunday night I decided to have a good time as the neighborhood celebrated the last weekend of summer break…and tried to pretend I was college aged again. Needless to say, I woke up yesterday feeling like crud.

But then…had lunch and felt fantastic! And then…wham! I started to feel just horrendous. Couldn’t stand up, couldn’t shower, couldn’t even lay in bed without feeling like I was going to be sick. I knew it wasn’t just being hungover, but I couldn’t figure it out. Then, Casey noticed that the hamburger buns were slightly moldy…and yes folks, I had a hamburger, with one of those buns, for lunch.

So, my last day of the holiday weekend was spent in bed, a little of it just being hungover…the majority of it with mild food poisoning.

But, enough of my complaining…I am on the mend and besides yesterday we had a fantastic weekend!

Saturday, we headed off to the State Fair. If you’re not from Minnesota, you really won’t understand why we get so excited to go. Everyone hits up the fair at least once during it’s 10 day run. And we lucked out with the best weather for it! Upper 60s/lower 70s, a breeze and no humidity! (yep, fall is here!)

And per their most recent facebook posting, the State Fair had 1,776,211 visitors! And that doesn’t include all the kids under 5 that are free!

We had an absolute blast, despite the crowds, and Gavin got to enjoy several big time Minnesota fair, firsts!
